Easy

In this post, I’ll show you how to make vegan Teewurst. Red lentils, refined coconut oil and smoked paprika form a creamy, spreadable mixture that tastes surprisingly close to real Teewurst.

You only need a few ingredients, and preparation takes 20 minutes. It’s perfect if you’re looking for a plant-based alternative that appeals to meat eaters too.

You’ll find more spread recipes on my website: vegan liverwurst, beet spread and an olive spread. For more recipes, explore my sausage recipe collection.

Make vegan Teewurst – Step-By-Step Instructions

1

Cook the lentils

Cook the red lentils in plain water according to the package instructions. This takes about 10-12 minutes. I season the mixture at the end, but you can cook the lentils in salted water if you prefer. Important: They should be soft but not mushy.

Put the ingredients in the blender

Add all the ingredients and seasonings to a blender or food processor along with the cooked lentils.

3

Blend finely

Blend the ingredients. You have two options: for a coarse texture, use the pulse setting or switch the blender on about 4-8 times for a few seconds each. For a finer texture, blend for longer until creamy. I want the spread to resemble Teewurst as closely as possible, so I blend it very finely.

Tip: Smoked paprika provides the characteristic smoky flavor, since the spread itself isn’t smoked. You can also use smoked salt instead of regular salt.

Fill jars and chill

Spoon the mixture into jars and chill for several hours, ideally overnight. This firms it up and gives it a spreadable consistency. The refined coconut oil helps the spread set in the fridge.

Tip: If the chilled mixture is still too runny, stir in a little xanthan gum or locust bean gum.

Serve

Your vegan Teewurst is ready. Take it out of the fridge about 30 minutes before serving for the best spreading consistency. Enjoy!

Frequently asked questions

What is the shelf life of vegan Teewurst?

What is the shelf life of vegan Teewurst?

The spread keeps tightly covered in the fridge for about 1 week. Always use clean utensils to help it keep as long as possible.

Can I freeze vegan Teewurst?

Can I freeze vegan Teewurst?

I wouldn’t recommend freezing this spread because the refined coconut oil changes its texture. It’s better to make only as much as you’ll use in a week. With 250 g per batch, that’s easy to do.

Which lentils work best for vegan Teewurst?

Which lentils work best for vegan Teewurst?

Red lentils are ideal because they break down when cooked and make a creamy mixture. Yellow lentils also work. Brown or green lentils are less suitable because they hold their shape and the spread won’t be as smooth.

What if the mixture is too runny?

What if the mixture is too runny?

First refrigerate it for several hours. The refined coconut oil firms up and binds the spread. If it’s still too runny afterward, stir in a little xanthan gum or locust bean gum and chill it again.

Can I make vegan Teewurst without rum?

Can I make vegan Teewurst without rum?

Yes, juniper rum is optional. It adds a lightly aromatic note reminiscent of real Teewurst, but the spread still tastes very good without it. Regular rum or rum flavoring are alternatives.
