In this vegan liverwurst recipe, I’ll show you how to make a lentil spread that tastes surprisingly close to real liverwurst.
As a sausage maker, I know that much of liverwurst’s flavor comes from its seasonings: marjoram, white pepper, ginger and mace. Those same spices go into this lentil spread. The base is small brown lentils (Berglinsen), refined (neutral-tasting) coconut oil and sautéed onions. Important: Use refined (neutral-tasting) coconut oil. The first time I made this, I used unrefined coconut oil and everything tasted of coconut.

The equipment to make vegan liverwurst
Blender
You’ll need a blender or food processor to combine the ingredients. An immersion blender also works.
Jars
You’ll need jars to store the spread. Traditional straight-sided preserving jars or WECK jars work well.

Make vegan liverwurst – Step-By-Step Instructions
Cook the lentils
Cook the small brown lentils (Berglinsen) in hot water according to the package instructions until tender but still with a little bite. I don’t salt the water. Instead, I weigh the seasonings separately and add them later. I do the same when making sausage because it gives a more even flavor.
Chop the onions
Slice or dice the onions. They will be blended later, so there’s no need to chop them especially finely.
Fry the onions until translucent
Fry the onions over low to medium heat until translucent. A few lightly browned patches are fine and add flavor. Use a little neutral oil for the vegan version, or butter for a vegetarian version.
Combine the ingredients and seasonings
Put the cooked lentils, fried onions, refined coconut oil, sunflower oil and all the seasonings into a food processor or blender.
Blend coarsely or finely
Now decide how you want your vegan liverwurst to feel. For a coarse version, pulse the blender just 4-8 times for a few seconds each. For a smooth, creamy texture, blend a little longer. Both taste great; it’s a matter of taste.
Fill jars and chill
Spoon the mixture into clean jars, close them and refrigerate for at least 2 hours. As it cools, the spread firms up and becomes easier to spread on bread.
