Food processor / Thermomix / immersion blender

A food processor combines the ingredients into a creamy mixture. A Thermomix or immersion blender works just as well.

Make spinach spread – Step-By-Step Instructions

1

Prepare the vegetables

Finely chop the garlic and roughly chop the spinach and green onion. They don’t need to be perfectly even because everything goes into the food processor later.

2

Heat the pan

Add a teaspoon of olive oil to a pan and heat over medium heat.

3

Sauté the spinach

Add the garlic, spinach and green onions to the pan. Sauté everything over medium heat until the spinach wilts.

4

Cook for 5 minutes

Cook over medium heat for about 5 minutes. You want the water to evaporate and the spinach to be thoroughly cooked.

5

Squeeze out the water

Transfer the mixture to a bowl and squeeze out the remaining water thoroughly. Important: This determines the texture. The more water you squeeze out, the creamier and more spreadable the result.

6

Chill the mixture

Pour off the released water and refrigerate the mixture for about 30 minutes. Tip: Keep the water! If your spread turns out too firm, you can add it back.

7

Put everything in the food processor

Put the cream cheese and crumbled feta into the food processor. Add the lemon juice, dill and cold spinach mixture.

8

Blend until creamy

Blend everything finely until smooth and creamy. If you prefer a chunkier spread, pulse briefly to keep a more rustic texture.

9

Season to taste

Season your spinach and feta spread with salt and pepper. Tip: Feta is already quite salty, so add salt carefully and taste as you go.
