In this tofu spread recipe, I’ll show you how to make a creamy homemade spread.

It’s vegan, high in protein and ready in just 5 minutes. On bread, on a roll or as a vegetable dip at your next barbecue, this tofu and herb spread fits right in.

The equipment to make tofu spread

Food processor / Thermomix / immersion blender

A food processor blends the ingredients into a creamy mixture. If you have a Thermomix or just an immersion blender, you can use that too.

Make tofu spread – Step-By-Step Instructions

Crumble the tofu and blend the base

Gently press the tofu first to remove excess water. This makes the spread creamier and lets you add more olive oil for a fuller flavor. Crumble the tofu into the blender, add the seasonings and juice of half a lemon, and blend for about 1 minute.

Add cashews and liquids

Add the soaked cashews, garlic, water, a little olive oil and apple cider vinegar. Tip: You can also use the cashew soaking water for extra creaminess.

Purée until smooth

Purée until the mixture is smooth and even. Scrape down the sides with a spatula from time to time so everything blends evenly. Add a little more water or olive oil to reach your preferred consistency. It’s a matter of taste!

Fold in the herbs and season

Add the finely chopped basil, chives and dill, then season with salt and pepper. Stir thoroughly with a spoon. Fold the herbs in rather than blending them. This keeps them visible and gives the spread a nice texture.

Fill the jars and enjoy

Fill clean jars with the finished spread and close them tightly. Your tofu spread is ready. Enjoy!

Two tofu spread variations

The method is the same as the basic recipe above for both variations. Only the ingredients change.

Quick tofu spread with fewer ingredients

For an even quicker version, leave out the cashews and herbs entirely. Perfect when you want a spread on the spur of the moment and don’t have much in the house.

Ingredients:

  • 160 g plain tofu
  • 1 garlic clove
  • 4 tbsp water (more if needed for the consistency)
  • 2 tbsp apple cider vinegar
  • salt
  • pepper
  • olive oil

Mediterranean tofu spread

Rosemary, thyme and oregano instead of basil and dill give the spread a Mediterranean character. It’s especially good on toasted ciabatta or as a dip for grissini.

Ingredients:

  • 160 g plain tofu
  • 1 garlic clove
  • 5 g onion powder
  • 4 g fresh rosemary (finely chopped)
  • 4 g fresh thyme (finely chopped)
  • 4 g fresh oregano (finely chopped)
  • 4 tbsp water (more if needed for the consistency)
  • 2 tbsp balsamic vinegar
  • salt
  • pepper
  • olive oil
  • Optional: 1 tsp honey or agave syrup

In a tightly closed jar in the refrigerator, the spread keeps for about 1 week. Always use a clean spoon to take some out.

In principle, yes, but the consistency suffers a little. The cashews and olive oil can become slightly grainy after thawing. If you want to freeze it, divide it into small containers first and thaw it slowly in the refrigerator.

Plain tofu, without smoking or marinade, works best. Its neutral flavor lets the herbs and seasonings stand out. Silken tofu works too, but makes the spread much runnier.
