In this post, I’ll show you how to make Fleischsalat yourself. It’s simple and super quick to make.
Fleischsalat is a classic spread here in Germany. It tastes great on a freshly baked bread. If you have access to the Fleischwurst you’ll need for the Fleischsalat you can buy it. Or you can make it yourself. It is up to you. You can find my Fleischwurst recipe here. You could also substitute with Bologna if you have no other options.

Because the preparation is so easy I added a Fleischsalat without mayonnaise and an “Asia inspired” version as well.

Fleischsalat (meat salad) – What do you need to make it?
Ingredients each for 500 g
Classic Fleischsalat with mayonnaise
- 45 % Fleischwurst (225 g)
- 40 % mayonnaise (200 g)
- 15 % gherkins (75 g)
Fleischsalat without mayonnaise
- 60 % Fleischwurst (300 g)
- 35 % sour cream (175 g)
- 5 % herbs (25 g)
- dash of apple cider vinegar
Fleischsalat with an Asian touch
- 50 % Fleischwurst (250 g)
- 25 % Kewpie mayonnaise (125 g)
- 20 % kimchi (100 g)
- 5 % Miso (25 g)
Salt & pepper each to taste.
The equipment to make Fleischsalat
Glasses or Tupperware
To fill the fleischsalat you need jars. You can use traditional preserving jars or WECK jars. Alternatively, you can also use a normal Tupperware.
Make Fleischsalat (meat salad) – Step-By-Step Instructions
1st variant: Classic Fleischsalat (Meat Salad)
1. Cut the Fleischwurst into small, fine strips.
2. Now you can dice the gherkins. Make sure that the cubes are very small.
3. Mix the sausage with the gherkins and the mayonnaise.
4. Season your Fleischsalat with salt and pepper.
5. Your Fleischsalat is ready😄. Enjoy it.
2nd variant: Fleischsalat without mayonnaise
1. Cut the Fleischwurst into small fine strips.
2. Finely chop the herbs of your choice.
3. Mix the sausage with the herbs, the apple vinegar and the sour cream.
4. Season your Fleischsalat with salt and pepper.
5. Your Fleischsalat without mayonnaise😄 is ready. Enjoy it.
3rd variant: Fleischsalat with an Asian touch.
1. Cut the Fleischwurst into small fine strips.
2. Now you can cut the kimchi into small pieces.
3. Mix the sausage with the kimchi, the miso and the Kewpie mayonnaise.
4. There you go, your Fleischsalat with an Asian touch😄. Enjoy it.
How long is the shelf life of the Fleischsalat?
You should consume your Fleischsalat within 3 – 4 days.
