In this post, I’ll show you how to make your own pork roast in aspic. You can achieve a super tasty result with little effort. Pretty similar to other brawn recipes on the blog.
The pork roast in aspic can be served however you like. Traditionally, it is often eaten with roast potatoes or bread.
I use carrots and parsley for the garnish. You can also change this as you wish.
In the post I use Bloom 240 aspic powder, but you can also cook out pigs feet and pork shank. These cuts have a lot of collagen. This makes the aspic firm on its own after cooling. You can find instructions for this in my german Sülze recipe.

Pork roast in aspic – What do you need to make it?
Spices per liter of aspic
- 0.75 l water
- 0.25 l vinegar
- 15 g salt
- 2.5 g pepper
- 0.5 g bay leaves
- 0.5 g allspice
- 100 g onion
- depending on the desired firmness: Bloom 240 aspic powder
Depending on the size of your mold, you will need approx. 250-300 ml aspic broth for the pork roast in aspic.
Filling:
- 400 g roast (can also be from the day before)
- 100 g carrot
- parsley

In order to make your roast pork in aspic, you’ll need a mold in which it can cool.
Make pork roast in aspic – Step-By-Step Instructions
Optional making roasts
As mentioned above. You can also use your roast from the day before. Here I show you how to make your own roast.
For the roast you will need
- a piece of pork, for example pork butt or pork belly (approx. 1 – 1.5 kg)
- 150 g carrots
- 150 g celeriac
- 150 g leek
- 50 g parsnip
1. First, roughly chop the soup vegetables.
2. Salt the meat well on all sides.
3. Put the meat with the soup vegetables in a roasting pan. Make sure that if you take a piece of meat with a rind, the rind is facing upwards.
4. Fill the roasting pan with hot water. Add a little salt there too.
5. Put the roasting pan in the oven at 180 °C (356.0 °F) for 2-3 hours.
6. Your roast is ready.
Making pork roast in aspic
1. Cut the cooled roast into strips.
2. Put the onions, water, vinegar and spices (except for the aspic powder) in a pan.
3. Stir the ingredients, put the lid on the pan and leave to simmer for about 20 minutes.
4. Pass the stock through a sieve. It is best to also place kitchen paper in the sieve. This will make the stock as clear as possible.
5. Add the aspic powder to the liquid and stir well. If the aspic powder has not dissolved, you can reheat the liquid. However, the broth with the aspic should no longer boil. The amount depends on which aspic powder you use. The final aspic should be firm but not firm to cut.
6. Cut the carrot and parsley into fine strips. Optionally, you can also use the vegetables from your roasting pan.
7. Place the roast together with the carrots and parsley in the desired shape.
8. Pour the aspic stock over the ingredients.
9. Leave your roast in aspic to cool in the fridge for approx. 24 hours.
10. Your roast in aspic is ready 😄. Enjoy the taste.
How long is the shelf life of the pork roast in aspic?
Your pork roast brawn will keep for approx. 3 – 4 days in the refrigerator.
An alternative is to cook it in jars.
