Feta spread – What do you need to make it?

All the ingredients for feta spread

olive oil 15 ml
lemon juice 15 ml
garlic clove 1

This spread already has a strong Mediterranean character. For a Greek version, add chopped olives. That gives you a delicious Greek feta spread for bread.

The equipment to make feta spread

Food processor / immersion blender

A food processor blends the ingredients into a creamy mixture. If you have a Thermomix or just an immersion blender, you can use that too.

Spice grinder / mortar

A spice grinder is best for grinding your spices. A mortar works too, or you can use ground spices. I recommend grinding them yourself.

Make feta spread – Step-By-Step Instructions

1

Break up the feta

Cut the feta into pieces and put it in a food processor. You can also crumble it in by hand. The pieces don’t need to be perfect; the machine will do the rest.

2

Add lemon juice

Pour the lemon juice over the feta. The acidity gives it a fresh flavor and loosens the mixture.

3

Add cream cheese and herbs

Add the cream cheese and herbs. I use fresh thyme and oregano, but you can choose herbs to suit your taste. Make sure no stems go in.

4

Grate the garlic

Finely grate the garlic with a Microplane and add it to the processor. Alternatively, quarter it and add it that way. Grating gave me a better result because the garlic distributes more evenly. Tip: Scrape the remaining garlic off the grater so none goes to waste.

Season and blend

Season with salt and pepper and blend thoroughly. Important: Be careful with the salt! Depending on how salty your feta is, you may need less or no extra salt. You can be more generous with the pepper.

6

Blend until smooth

Blend until the mixture is smooth and creamy. Scrape down the sides from time to time so everything combines. Once it reaches a spreadable consistency, it gets easier and quicker.

Stir in the olive oil

Add the olive oil and stir the spread again. The oil rounds out the flavor and makes it extra creamy. Taste it one last time: more herbs, more feta, more lemon? Adjust it to your liking.

In principle, yes, but the consistency suffers a little. Cream cheese and feta become slightly crumbly after thawing. If you freeze it, give it a thorough stir after thawing.

I recommend authentic Greek feta made from sheep’s milk. It’s especially flavorful and creamy. Less expensive cow’s milk white cheese works too, but tastes milder. The saltier your feta, the less salt you’ll need when seasoning.
